Steve Jenkins, author of Cheese Primer recently contacted Vermont Farmstead Cheese Co. with the following rave review for the WindsorDale.
"I just tasted, finally, the WindsorDale. I had to write immediately to tell you how impressed I am. It exemplifies superb cheesemaking. The mouthfeel of it is one of tenderness rather than the recipe's usual waxiness. Nor does it display the brittleness, the granularity of English Wensleydale. This cheese is welcome on the tongue rather than an intruder. Its attack is more sweet caress than acidic slap, and the mellow warmth of its palate-molten liquor is loaded with umami, the subtotal a confounding sensory effect that serves to beckon and ready me for yet another slash from the meager wedge you so parsimoniously bestowed upon me. But I must await the prior morsel's long, long finish, and this, Pietro, is the truest evidence of the masterly status of this fine stuff."--Steve Jenkins
